Sake, pronounced "Sah-Kek", NOT 'Sok-kee" in a class of its own. It is brewed like a beer AND fermented like wine, yet is neither. It is NOT rice wine, it is simply SAKE. The categories below dictate the amount of milling a grain of rice experiences, hence changing the style of the resulting sake.

Sake is the highest naturally fermented product in the world. Therefore, all sake is watered back. This process is similar to scotch EXCEPT that sake is fermented like wine, NOT distilled like a liquor.
